The Royal Gourmet’s charcoal firebox is impressive. It features dual air vents to maintain good grilling heat, making it easy to operate as a smoker as well. As a rule, 400 square inches should be enough to cook about 12-16 burger patties in one go. Construction Build Gas and charcoal is the number one priority here, but some models also add wood pellets as an added third fuel source. The Char-Broil is a winner when cooking with gas. Results have a barbecue flavour, thanks to juices dripping down, hitting the metal bars above the burners, and smoking. But it was the ease of converting to charcoal that really impressed us. You simply remove the bars using the grate lifter tool and add one tray (stored underneath) to cover the gas burners, then load it with a single layer of charcoal. And then – the absolute star feature – you light the gas on its lowest setting, close the lid and leave the gas on for 15 minutes. Turn the gas off and you have a perfectly lit charcoal barbecue that’s ready to cook on after five more minutes.

After spending more than two hours assembling a Traeger Pro (below) for this test, we weren’t enthused about setting up another one. Thankfully, it arrives fully constructed (except for the wheels) so there are no worries about this grill collapsing on you, spilling your dinner and setting the yard on fire due to poor assembly skills.At 168 pounds, it’s a heavy unit, but it’s easy to move around. Besides, when it comes to outdoor grills, I like to bit of heft. This is a beast, and boasts separate chambers for charcoal smoking and gas grilling, as well as a propane side burner and offset firebox. In terms of total time spent, from unboxing to fully assembled, I'd say it took me about two hours to build the Char-Broil Gas2Coal 210 Hybrid BBQ. Anyone capable of using a screwdriver will be able to put this together, although, having a second pair of hands does make it easier to construct. Unlike some other barbecues we've tested, this one has four wheels on the base rather than two, which should make it nice and easy to move around your garden. All of the grills are dishwasher-safe too, meaning less time scrubbing and more time relaxing. It’s great for large families or even for those of us who like to show off a bit with our home equipment. What I would add though is that, when compared to its propane element, the charcoal grill here just feels… a bit… cheap. It’s an odd quality imbalance here, as you would assume that the gas grill would be more demanding to design and assemble, but for some reason it’s the charcoal grill that lets this model down. However, if you’re mostly after a gas grill but with the option of charcoal grilling, then this is a great option to have. You have to be very careful not to burn your food on coals, but with this gas BBQ you can instantly turn the heat down, which you cant do with coals. No, you can’t use charcoal fuel in a standard gas or propane grill. Gas grills are not designed to take on other fuels besides propane gas.Throughout cooking it was possible to simply pull down the lid and re-heat the interior of the Char-Broil Gas2Coal BBQ at any time. We saw the temperature gauge react instantly, with an average temperature of about 150-200°C throughout cooking, even when we had been grilling for some time. First, you need to fill the charcoal tray with a single layer of coals, then put both gas burners on their highest setting and close the lid. Across this cooking area it has a 3-burner gas grill, an offset smoker, a charcoal grill, anda side burner for searing. Between these three, it has all aspects of BBQ cooking all taken care of. Cooking on gas also seems to work fine, very good temp control, cleaning is a bit of a problem as the bottom of the BBQ bit is not removable, my old BBQ the whole under side beneath the burners slid out and could be scraped clean quite easily, the Coal 2 gas requires you to remove all the grill, heat shields etc to get and clean it. (Unfortunately, it does say in the small print that this BBQ is not designed to be cleaned by turning it on full and burning excessive off, I hadn’t seen this bit, this technique worked fine on my old barby for years.) Both gas and charcoal modes cooked excellently, but you get different flavor profiles and cooking experiences depending on which you opt for. If you want to put on a last minute BBQ dinner, just firing up the gas mode takes minutes, and for preserving fuel and achieving that authentic summer alfresco dining experience, the charcoal really is first in class.
